    Cheese pies

    Materials

    For the dough:

    • ½ kilo of flour
    • 2 tablespoons of olive oil
    • 1 tablespoon of juice from fresh lemon
    • 1 ½ cup of tea water with a snap of salt
    • 1 cup of tea olive oil for the frying
    • honey or sugar faint for the serving

    For the filling:

    • ½ mizithra sweet (cheese)
    • ¼ The sour mizithra
    • 2-3 leaves of fresh spearmint (optionally)
    • 2 tablespoons sugar

    Implementation

    1. In a bowl pour tepid water; add the olive oil, the juice of lemon, the salt and progressively the flour, until you take homogeneous and fluffy dough.
    2. Mix the cheeses with the sugar and the spearmint. Separate the dough in big pieces. Open each piece in a big leaf of thickness of 1 cm. Cut circles roughly 4-5 from diameter. In each circle you put one spoonful of soup filling and you fold the two utmost, so that it takes shape of a crescent. If you want, you can cover the circle with the filling with a half circular leaf and press the edges with a fork.
    3. In a frying pan pour the olive oil and leave it there to warm very well. Fry the cheese pies in the oil, until they brown. Serve them hot with honey or powdered with sugar.
